This strawberry cake by Preppy Kitchen is definitely one of my top favorite recipes! It has the perfect balance of sweet, creamy, and fruity flavors. Plus, it has a soft and fluffy texture that is way too good to resist. I am sure everyone at your home will love this dessert treat.

Preheat your oven to 350F. Grease your 9-inch round cake pan with butter or baking spray, then line the bottom with parchment paper.
Add flour, baking powder, salt, and baking soda in a large bowl. Whisk them together.
In the bowl of a stand mixer with the paddle attachment or in a large mixing bowl, beat the butter on medium speed until creamy. Next, add the sugar and continue beating until it becomes light and fluffy for 5 minutes.
Scrape down the sides of the bowl, then add the egg whites and vanilla. Whisk on medium speed for about a minute or until well combined and fluffy. Turn the speed to low. Next, add the flour mixture alternating with the milk and the strawberry reduction. Mix until just combined. Make sure to stop and scrape down the bowl as needed. If you want to add color, you can add a drop or two of pink food coloring. After that, divide the batter among the two cake pans.
Bake the cake for 30 minutes or until it becomes springy and starts to put away from the sides of the pans. After that, let it cool first in the pan for 20 minutes. Next, remove the cake and let it cool completely on a wire rack. Discard the parchment paper.
Beat cream cheese, butter, and vanilla in a large mixing bowl or using the bowl of a stand mixer with a paddle attachment until it becomes smooth and fluffy for about 5 minutes.
Turn the mixer on low, then gradually add the powdered sugar alternating with a tablespoon of strawberry puree. Make sure to stop mixing and scrape down the bowl a few times. Once everything is added, turn the speed to medium and beat until fluffy. If it’s stiff, add a tablespoon or two of puree or milk.
Put a cake layer on the cake stand and spread about one cup of frosting on top. Place the second layer and spread the remaining frosting all around. Cover and keep at room temperature for up to 5 days.
