Quinoa has a natural coating that tends to be bitter. The Mediterranean Dish suggests rinsing them well before cooking if you don’t like the bitter flavor.
Start by cooking the quinoa in a pot based on package instructions. Add a drizzle of olive oil and a pinch of salt while it simmers.

While waiting for the quinoa, make the salad and dressing. In a bowl, zest and juice 1 lemon. Add 3/4 teaspoon of kosher salt, and a teaspoon of dried oregano. Whisk the mixture while pouring 1/4 cup of olive oil. Set aside.
Chop the bell peppers and cucumber into small cubes. Slice the scallions. Add all of them in the same bowl as the dressing.
Once the quinoa is cooked, give it a mix. Add into the salad bowl. Mix everything until well combined.
Sprinkle creamy feta cheese on top and some olives. Mix and let it sit for a couple of minutes before serving. Enjoy!
