I so love green beans, so when they are in season, I always make sure to put together this recipe from The Domestic Geek on Youtube. This is my absolute favorite green bean salad recipe, and I always crave this. It has the right crunch texture, and the Mediterranean-inspired dressing is to die for. This may look simple as it’s easy to put together but trust me – it’s delicious! You can eat this on its own, but it is also a wonderful side dish for beef, chicken, and seafood like shrimp or salmon. Ingredients:

  • 1 lb green beans, trimmed and halved
  • 3 tbsp olive oil
  • 1/2 lemon, juice
  • 1 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1/2 tsp dried oregano
  • 1 cup halved cherry tomatoes
  • 1/2 cup crumbled feta cheese
  • 1/4 cup pitted kalamata olives (optional)
  • salt and pepper, to taste

Directions:

Step 1

Combine 3 tbsp olive oil, half lemon juice, 1 tbsp red wine vinegar, 1 tsp Dijon mustard, 1/2 tsp dried oregano, and salt and pepper to taste in a small bowl. Whisk well and set it aside. Next, cook your green beans in a pot of boiling water for three to five minutes, until they are just tender. Then, drain them completely and cool them off in an ice bath to stop the cooking process. After they have completely cooled, transfer them to a large mixing bowl.

Step 2

To your green beans, add 1 cup of halved cherry tomatoes, 1/2 cup of crumbled feta cheese, 1/4 cup of pitted kalamata olives, and pour over the dressing. Toss until combined. Serve and enjoy!
