Ingredients:

  • 2 tbsp sunflower oil
  • 4 chicken portions (legs or thighs) washed and dried with kitchen paper
  • 4.40 oz (125g) smoked back bacon, cut into strips
  • 2 large carrots, 1cm thickly sliced
  • 2 celery stalk sticks, thinly sliced
  • 1 large onion, thinly sliced
  • 1 tbsp butter or margarine
  • 3/8 cup plain flour
  • 1-liter chicken stock (low-salt)
  • 1 bouquet garni
  • salt and black pepper to taste
  • 4 medium potatoes, peeled & cut into large chunks
  • chopped parsley for garnish

Directions:

Step 1

Preheat the oven to 325 degrees F. Next, add 2 tbsp sunflower oil in an oven-safe pot, then add the chicken, skin down, and cook them on both sides til brown. After they’ve browned, remove them from the heat and set them aside. After this, in the same pot, add the bacon, carrots, celery, and onion. Saute on high heat until veggies are golden. After cooking, remove from heat and set aside. Next, add 1 tbsp butter, 3/8 cup flour, and 1 liter chicken stock to the same pot and stir until smooth.

Step 2

Now, add the bouquet garni and salt and pepper to taste. Add back the chicken followed by chopped potatoes and bacon mixture. Spread them out evenly. Bring it to a boil, then turn off the heat and cover the pot with a lid. Place the pot in the preheated oven at 325 degrees F and cook for 1 hour and 15 minutes. After this, garnish it with some freshly chopped parsley.
