This marshmallow fridge tart by Woolworths TASTE Magazine will be your next favorite dessert. It definitely looks like a pineapple dream dessert as it uses the same ingredients, but the flavors are a little bit different since this recipe uses coconut cookies and marshmallows. This classic South African dessert uses Tennis Biscuits, but if you can’t find that in your area, you can look for Voortman Bakery coconut cookies or any coconut cookies you prefer.

You only need a few ingredients to make this recipe – butter, condensed milk, coconut cookies, cream, crushed pineapple, vanilla extract, marshmallows, and lemon. The coconut flavor of the cookies and vanilla definitely adds a nice flavor to the cream filling. It is perfect for the warmer weather, as it’s sweet, refreshing, and light. Go ahead and try this dessert at home. I am sure everyone will love it.
Start by placing the cookies in a ziploc bag. Use a rolling pin or any heavy object to crush the cookies. Alternatively, you can use a food processor. Transfer to a bowl.
Add melted butter to the crushed cookies and mix until it becomes crumbly. Transfer to a pie dish and press on the bottom and sides. Place in the fridge until it solidifies.
Add some cream to a bowl and whip for just a few minutes. Fold in a little bit of vanilla extract, condensed milk, and crushed pineapple.
Add the marshmallows to the mixture and gently fold. Add some lemon juice to the mixture and mix well.
Add the mixture to the crust, then chill in the fridge for an hour before serving. Enjoy!
