Flatten the slices of bread using a roller pin and use a round cutter to create a circle.
Crack 2 eggs and put them in a bowl. Whisk using a fork. In a separate bowl or plate, put some breadcrumbs. Once done, dip the circle-shaped bread into the whisked egg, then coat with breadcrumbs on both sides. Do the same for the remaining slices.
Boil a lot of oil into a pan. Once boiling, put the pieces of breaded bread. Don’t overcrowd the pan. Cook on both sides and wait until it puffs. Remove from oil and place into a plate with a paper towel.
Chop the onions, bell pepper, and chicken breasts into small pieces. Then shred the carrot. Drizzle some oil into a pan. Once hot, put the onion and cook until soft and translucent. Add the chopped chicken breasts and mix. Cook until slightly brown.
Put the paprika, salt, sliced pepper, and shredded carrots into the pan. Mix, then add the mayonnaise and mustard. Stir all the ingredients together. Once done, set aside.
Cut some cabbage into thin slices. Slice the bread into half and put some of the sliced cabbage. Then take a scoop of the chicken and put it inside the pocket of the bread. Do the same for the remaining pieces.
