Ingredients:

  • 4 cups leftover/cold mashed potatoes
  • 1/2 cup sliced green onions
  • 3/4 cup chopped cooked bacon
  • 1 tsp garlic powder
  • 1/2 tsp ground black pepper
  • 2 eggs
  • block of cheddar cheese, cut into small pieces
  • 1 cup of flour
  • 1 cup of bread crumbs
  • oil, for frying
  • salt

Directions:

Step 1

To start, slice your block of cheese into small pieces; set them aside. Next, to a large bowl, add the cold mashed potatoes, 1/2 cup green onion, 3/4 cup bacon, 1 tsp garlic powder, 1/2 tsp ground black pepper, and 1 egg. Mix together to combine. After this, start assembling the mashed potato balls. Scoop a tablespoon size of the potato mixture, flatten it, place a piece of cheese at the center, then form it into a ball. Coat it in this order: flour, beaten egg, breadcrumbs, beaten egg, and back to the breadcrumbs.

Repeat this process until your finish the potato mixture. Next, heat a large pan over medium to high heat, then add enough cooking oil for deep frying. Once the oil is hot, drop the potato balls gently and cook them until brown. After frying, transfer them to a bowl lined with paper towels to drain them with excess oil, then put them in a baking tray, sprinkle with some salt, and bake in a preheated 400 degrees F oven for five minutes. Serve and enjoy!
