Ingredients:
- 2 lb baby potatoes (approx. 15 – 20 potatoes)
- 1 whole pre-cooked rotisserie chicken (meat removed and shredded)
- 1 lb bacon (sliced crosswise into 1/2″ pieces)
- 1 pc. 12 oz bag frozen broccoli (thawed and press the water out)
- 1 bunch of green onions (sliced crosswise, white and green parts)
- 1/2 cup chicken broth
- 2 cups sour cream
- 2 cups shredded cheddar cheese
- 1 tsp paprika
- 1/2 tsp pepper
- 1/2 tsp salt
Directions:
Step 1
Cook your potatoes until they are fork tender, then set them into your casserole dish. Smash them partway with the bottom of a glass. Keep smashing the potatoes until the bottom of the tray is lined with them. Now, get the grease from the bacon you cooked and drizzle a little bit of this all over the potatoes. Next, add the shredded meat from the rotisserie chicken into a bowl followed by 1 package of frozen broccoli, a bunch of chopped green onions, diced bacon, salt, and pepper. Mix everything well to combine.

Step 2
After this, dump all the chicken mixture over the potatoes, spreading it evenly. Sprinkle a bit of salt over the top. In a separate bowl add 2 cups of sour cream, 2 cups of shredded cheddar cheese, 1/2 cup of chicken broth, and 1 tsp paprika. Mix it all well, then pour it right over the chicken, spreading it evenly. Cover it with tin foil, pop it in the oven at 375 degrees F and bake for 20 minutes. After 20 minutes, pull it out of the oven, and garnish it with some chopped green onions, bits of bacon, and shredded cheese.
