Ingredients:

Batter:

  • 1 cup of plain yogurt
  • 3 large eggs
  • 1 cup of white sugar
  • 2 cups of all-purpose flour
  • 1 cup of olive oil
  • juice of two lemons
  • 2 tsp baking powder
  • 1 tsp vanilla essence
  • zest of one lemon
  • a pinch of salt

For the Frosting:

  • 1 1/2 cups of powdered sugar
  • juice of one lemon
  • toasted coconut, for garnish

Directions:

Step 1

Combine 1 cup of plain yogurt, 3 large eggs, 1 cup of white sugar, 1 tsp vanilla essence, zest of one lemon, and juice of two lemons in a mixing bowl. Mix well to combine. Next, sift 2 cups of all-purpose flour into the mixture and add a pinch of salt, 2 tsp baking powder, and 1 cup of olive oil. Whisk all in until a smooth batter. Grease a cake pan and pour the batter onto it, spreading nicely and evenly. Tap a few times to remove air bubbles. Place it in a 350 degrees F oven and bake for 30 minutes.

Step 2

Add some coconut flakes to a dry pan, then turn the heat on and toss until toasted. Once the cake is finished baking, transfer it to a cooling rack and leave it to cool completely. In the meantime, make the frosting. Combine the juice of one lemon and 1 1/2 cups of powdered sugar in a medium bowl and mix well. Pour it over the cooled cake, spreading nicely, letting it drip to the sides. Garnish the top with some toasted coconut flakes. Cut it into slices and serve.
