Lemon bars are one of my absolute favorite desserts, and this recipe from Food Wishes on Youtube is my go-to whenever I’m craving them. This is the best lemon bars recipe I’ve tasted, and it’s also super easy to make! No need for fancy baking equipment; you can make this from scratch with what you already have. Ingredients:

For the shortbread crust:

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, room temp
  • 1/4 cup powdered sugar
  • 1/4 tsp vanilla extract
  • 1/4 tsp salt

For the lemon layer:

  • 2 large whole eggs
  • 1 large egg yolk
  • 1 cup white sugar
  • 2 tbsp all-purpose flour
  • 1/4 cup fresh lemon juice
  • 1 tbsp grated lemon peel

Directions:

Step 1

Add 1/2 cup unsalted butter, 1 cup all-purpose flour, 1/4 cup powdered sugar, 1/4 tsp salt, and 1/4 tsp vanilla extract in a bowl. Mash them up altogether until the flour is no longer visible. After this, transfer them to a greased baking dish. Spread and push it down as evenly as you can, then poke holes using a fork so it will cook nice and evenly. Bake this in a 350 degrees F oven for 22 minutes.

Step 2

While waiting, make the lemon layer. In a bowl, add two large eggs, 1 extra egg yolk, 1 cup white sugar, and 2 tbsp all-purpose flour. Whisk well, then add 1/4 cup of fresh lemon juice and 1 tbsp grated lemon peel. Continue whisking until well combined, then pour it over the shortbread base. Carefully place it back in your 350 degrees oven and bake for 25 minutes. After baking, let it cool completely before slicing it into pieces. Top the lemon bars with a sprinkle of powdered sugar or meringue (the extra egg white whipped with 1 tbsp of sugar.)
