Ingredients:

  • 2/3 cup of sugar
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 2/3 tsp vanilla extract
  • 1/3 cup melted butter
  • 2 large eggs
  • yellow food coloring (optional)
  • 2 cups cake flour
  • 1 tsp baking powder

Curd:

  • 3 tbsp sugar
  • 2 egg yolks
  • a pinch of salt
  • 1 1/4 tbsp cornstarch
  • 3 tbsp milk
  • 1/4 cup lemon juice
  • 1/4 tsp lemon zest
  • 1 1/2 tbsp butter
  • powdered sugar, for coating

Directions:

Step 1

Combine 2/3 cup of sugar, 1 tsp lemon zest, 1 tbsp lemon juice, 2/3 tsp vanilla extract, and 1/3 cup melted butter in a large mixing bowl. Mix well until smooth, then stir in 2 eggs and some yellow food coloring. After this, sift 2 cups cake flour and 1 tsp baking powder and mix until smooth dough. Once done, cover the dough with a cling wrap and chill it for two hours. In the meantime, make the lemon curd.

Step 2

Add 2 egg yolks in a saucepan along with 3 tbsp sugar, and a pinch of salt. Mix well. Next, stir in 1 1/4 tbsp cornstarch, then add 3 tbsp milk, 1/4 cup lemon juice, and 1/4 tsp lemon zest. Heat the mixture over medium heat and continue to stir until thickened. Once done, turn off the heat and stir in 1 1/2 tbsp butter. Strain the lemon curd, cover it with a cling wrap, and let it rest.

Step 3

Back to the dough, make some balls, and coat each with powdered sugar. After this, press each ball using the back of a measuring spoon, then bake them at 325 degrees F for 12 to 15 minutes. While waiting, transfer the lemon curd to a piping bag, then pipe it on top of each cookie once done baking. Serve and enjoy!
