The best sandwich recipe ever is here! Today, FlavCity with Bobby Parrish on YouTube will teach us how to easily make this very delicious and cheesy Kentucky hot brown sandwich using a cast-iron skillet. That already sounds good to me, if you think so too, then read down below for the instructions and watch his more detailed video tutorial as well which is also down below. Enjoy cooking!

  • 1/3 cup Tillamook Medium Cheddar Cheese grated
  • ¼ pound sliced turkey breast
  • 1-2 ripe tomatoes, sliced thick
  • 4 strips bacon
  • 2 slices good sandwich bread, toasted
  • 1 tbsp fresh parsley, chopped

Cheese Sauce

  • 1 cup Tillamook Vintage White Extra Sharp Cheddar Cheese grated
  • 2 tbspTillamook Unsalted Butter
  • 2 tbsp all-purpose flour
  • 1 cup whole milk
  • A pinch of freshly grated nutmeg
  • 1 tsp kosher salt
  • Freshly cracked pepper

Step 1

First, prepare the cheese sauce, place a small saucepan on a stove over medium-low heat, then melt the butter. Once the butter is melted, add in the flour and whisk constantly to avoid it from burning. When the mixture turns dark yellow in color or after about 4-5 minutes, slowly add the milk and raise the heat to medium while continuously whisking. Keep whisking so no lumps form in the sauce and cook until the mixture gets rich, creamy, and a little thick or for about 5 minutes. Take off the heat and add a small handful of white cheddar and whisk until it’s incorporated, continue doing this until you have used 1 cup of the grated cheese. Put back over low heat and season with the nutmeg, salt, and a couple of cracked fresh pepper. Mix and check for seasoning, then take off from the heat and set aside.

Step 2

Preheat a cast-iron grill pan on a stove over high heat, then quickly sear one side of the tomato until char marks appear, but no more than one minute, take off the heat and set aside. Then, to make the peppered bacon, preheat your oven to 400 degrees, lay the bacon on a sheet tray, and grind some pepper on each slice. Bake for 12 minutes until crispy, take out and set aside. Build the sandwich, first, preheat the broiler to low, and make sure there are 6 inches between the heating element and the rack. Using a cast iron pan or sheet pan, lay both toasted bread slices down. Top each with 2-3 slices of roasted turkey, and one slice of fresh tomato(not grilled), season it with a pinch of salt. Then, top each sandwich with a generous amount of cheese sauce. Add shredded cheddar and place under the broiler for 5 minutes until nice and bubbly. Take the pan out of the oven and top each with a grilled tomato slice, two slices of bacon in a criss-cross pattern, and garnish with chopped parsley.
