Ingredients:

  • 1 lb turkey breast, cooked and sliced
  • 1/4 cup turkey (or chicken) stock
  • 8 slices bacon, roasted
  • 4 slices bread
  • 1 cup white cheddar
  • 4 slices tomato
  • 4 tbsp butter
  • chives, for garnish

Mornay Sauce:

  • 2/3 cup whole milk
  • 2 tsp butter
  • 2 tsp flour
  • 3 oz shredded sharp cheddar
  • 1 1/2 oz American cheese
  • 1 tsp Dijon mustard
  • 1 tsp hot sauce
  • 1 tsp brisket rub

Directions:

Step 1

Place the sliced cooked turkey breast in a large skillet and pour 1/4  cup turkey (or chicken) stock. Put on the lid and warm it. In another skillet, melt 2 tsp butter, then add 2 tsp flour. Mix and cook for a minute to make a roux, then add 2/3 cup whole milk. Continue stirring until the milk simmer, then add 3 oz shredded sharp cheddar and 1 1/2 oz American cheese. Stir until everything melted and combined. Remove from heat, then stir in 1 tsp Dijon mustard, 1 tsp hot sauce, and 1 tsp brisket rub. Mix together until combined.

Step 2

In a cast-iron baking pan, melt 4 tbsp butter, then add the slices of bread to toast them. Add the turkey slices on each top followed by the tomato slices, then the mornay sauce. Add some shredded white cheddar, then throw them in the oven at 450 degrees F and bake until the cheese fully melts (about 8 to 10 minutes). Once done, remove from the oven, add the cooked bacon on top, then garnish with some chopped chives. Serve and enjoy!
