Add 1 cup + 1/4 cup warm water in a large bowl along with 1 1/2 tsp salt, 1/4 cup sugar, and 1 1/2 tsp yeast. Stir together until the ingredients dissolve completely. After this, add 3 1/2 tbsp softened butter and 4 1/4 cups of loosely packed flour. Mix until well combined. Once dough consistency forms, transfer it to your working surface. Knead for five minutes until smooth texture.
Now, divide the dough into ten equal parts, then take each piece and shape them into small round balls. Once done, cover them with a damp kitchen towel and let them rest for eight to ten minutes. After ten minutes, flatten each piece and hand roll them into a 6″ long shape. Then, roll and tuck in the long edge. Pinch the seam and ends to secure. Roll it again to make the surface smooth, then set aside. Repeat these steps for the rest of the dough balls.
Now, take one long dough, roll it, and elongate it until around 36 cm in length. After this, tie the dough into a simple knot, then take the bottom tail, wrap it over the knot, then push through the hole in the center. Once done, take the top tail down, joining it with the tail underneath. Pinch the ends to secure, then place in a parchment paper-lined baking tray. Repeat these steps to make more Kaiser rolls.
Cover the rolls with plastic wrap and let them rise for 70 to 75 minutes. Once ready to bake, brush each top first with eggwash and sprinkle some sesame seeds (optional). Place the baking tray in a 350 degrees F oven and bake the Kaiser rolls for 30 minutes.
