Why is Jennifer Aniston’s salad so famous? To be honest, I have never watched FRIENDS. Some of my friends did, but it just wasn’t my type of show. Apparently, Jenn had this salad every day while shooting FRIENDS. I’ve seen it everywhere online. I got very curious, so I decided to try this version by Cooking With Ayeh last weekend. Is the famous Jennifer Aniston salad recipe worth the hype? Yes, it definitely is! Not only is it delicious, but it is also very easy to make. Anyone can recreate this recipe at home.

It is packed with quinoa, red onion, chickpeas, crumbled feta cheese, fresh herbs, pistachios, cucumbers, lemon juice, and extra virgin olive oil. Start making the recipe by cooking the quinoa until it’s fluffy. Next, combine all the other ingredients in the bowl, including the cooked quinoa. Make the homemade dressing by mixing extra virgin olive oil, lemon juice, salt, and black pepper, then pour over the salad. Mix then it is ready to serve. How quick and easy is that? For the dressing:
Start by rinsing the quinoa, then add to a pot over heat, followed by some water. Let it come to a boil, then cover with the lid and simmer until cooked. Remove from heat and let it sit for a few minutes. Fluff with a fork.
Add the chopped onion into a bowl, then soak in water for 10 minutes.
Add the diced cucumber in a bowl, followed by chopped parsley and mint, chickpeas, chopped pistachios, drained onions, cooked quinoa, and crumbled feta cheese.
Make the dressing by combining all ingredients in a bowl. Mix until well combined.
Pour the homemade dressing over the salad and gently toss everything together.
