Ingredients:

  • 4 medium Italian sausages, sliced into bite-size chunks
  • 1 tbsp olive oil, for frying
  • 1/2 medium chopped onion
  • 3 cloves chopped garlic
  • 1/2 medium red bell pepper, julienned
  • 2 cups chopped green beans
  • 6 medium button mushrooms, chopped
  • 1/2 tsp dried basil
  • 1 tsp Italian seasoning
  • 1/2 tsp dried oregano
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 1 cup long-grain uncooked washed rice
  • 1 medium can of hot spiced Italian diced tomatoes
  • 2 cups chicken stock
  • 2 tbsp chopped parsley, for garnish
  • 2 cups mozzarella, grated

Directions:

Step 1

Sliced the Italian sausage diagonally and saute them in a pan with oil over medium-high heat. Cook them until they turn golden brown. Once the sausage is cooked through, add the chopped onion, garlic, red bell pepper, green beans, and button mushrooms. Give everything a good toss to combine. Season the sausage mixture with 1/2 tsp basil, 1 tsp Italian seasoning, 1/2 tsp oregano, 1 tsp ground black pepper, and 1 tsp salt. Give everything another quick tossing and turning.

Step 2

After this, add one cup of uncooked rice and a medium can of tomatoes. Mix everything well, then add two cups of chicken stock. Bring everything to a boil, then cover the pan with its lid. Let it simmer for 15 minutes. After 15 minutes, transfer the mixture to a casserole dish and sprinkle some grated mozzarella cheese on top. Place it in a 375 degrees F oven and bake for ten to fifteen minutes.
