This instant pot loaded cauliflower soup recipe by Keto with Sammy on YouTube is a great alternative for those who want a low carb meal. The cauliflower serves as a potato replacement that is still hearty and filling. I love cauliflower substitute dishes because they aren’t as bad as people think and it tastes very similar to a potato. Sometimes I prefer cauliflower because it is healthier. This is a quick recipe to make and the cauliflower is easy to cook. Also, if you don’t have an instant pot, you can make this on the stovetop.



  • 1 large head of cauliflower, chopped
  • 3 cups of chicken broth
  • salt
  • pepper
  • garlic powder
  • 1 cup of heavy whipping cream
  • 3 cups of shredded cheddar cheese, more for topping
  • Sour cream for topping
  • Bacon, Sliced & cooked
  • Green onions for topping


First, chop the cauliflower into chunks and drop them to the bottom of the instant pot. Season it with black pepper, garlic powder, and salt. Pour chicken broth on top of the cauliflower, and place the lid on top. Make sure it’s on sealing and not venting. Set the pressure cooker to HIGH for 8 minutes. Next, once the timer comes up, release the valve to let all the pressure out. Turn off and mash the cauliflower until there are no big chunks left. Add heavy whipping cream and shredded cheese. Stir and serve.
