This instant pot loaded cauliflower soup recipe by Keto with Sammy on YouTube is a great alternative for those who want a low carb meal. The cauliflower serves as a potato replacement that is still hearty and filling. I love cauliflower substitute dishes because they aren’t as bad as people think and it tastes very similar to a potato. Sometimes I prefer cauliflower because it is healthier. Ingredients:

  • 1 large head of cauliflower, chopped
  • 3 cups of chicken broth
  • salt
  • pepper
  • garlic powder
  • 1 cup of heavy whipping cream
  • 3 cups of shredded cheddar cheese, more for topping
  • Sour cream for topping
  • Bacon, Sliced & cooked
  • Green onions for topping

Directions:

First, chop the cauliflower into chunks and drop them to the bottom of the instant pot. Season it with black pepper, garlic powder, and salt.
