Turn on your instant pot, and add the oil, onion, and garlic. Saute for a few minutes.
Add the carrots, celery, salt, pepper, and thyme. Mix until well combined.
Pour the chicken broth and add the chicken. Place the lid then cook on pressure cook mode at high pressure for about 6 minutes.
After 6 minutes, let the pressure release naturally for about 10 minutes. Open the lid then remove the chicken and shred it into pieces using two forks.
Once shredded, place the chicken back in the instant pot and add the orzo, lemon juice, and parsley. Saute until pasta is cooked.
