I recently discovered this incredibly delicious chicken and potato soup recipe by HotFood on Youtube and it was an instant hit. It was super easy to make and just requires simple ingredients. If you are looking for a cheap and healthy dish, go for this recipe. Everyone in my family, even the kids, loves this soup. We’ve eaten this 2 times this week already. Add the chicken and 6 1/3 cups of water to the pot. Cook and remove the foam floating on top using a big spoon.
Add oil, diced onion, and grated carrots in a pan. Fry them over medium heat. Add 1 ladle of broth and cook until the onions and carrots are softened. Turn off the heat and set them aside.
Take the chickens out of the pot, place them on a plate, and let them cool.
Peel and slice the potatoes into cubes. Add the diced potatoes to the chicken broth and let it boil for about 3 minutes. Add 2 tablespoons of paste, peppercorn, 3 bay leaves, and fried carrots and onions. Cook until the potatoes are cooked through.
Crack the egg into a bowl and beat well. Add 1 cup of frozen peas and beaten egg into the soup, then mix. Season it with salt then remove bay leaves. Take it off from the heat. Shred the chicken and add it to the soup. Stir and serve in individual bowls while hot. Enjoy!
