These veggie balls are healthy, delicious, and loaded with lots of flavors. You won’t get enough of it once you try them, and you might even ditch the original for this version–they’re that delicious.

For this recipe, you’ll only need a handful of ingredients you may already have in your kitchen. It’s a quick, easy, and budget-friendly recipe you can make as an appetizer for large gatherings. Learn how to make them by watching the video below for the step by step instructions.
Preheat your oven to 350 degrees F. Next, prep the veggies accordingly. Drain the chickpeas and add them to a food processor. Pulse until ground and set aside. After this, chop the garlic, onion, and bell pepper and set them aside. Lastly, shred the spinach, cabbage, and carrots and set them aside as well. Heat a skillet and saute the chopped garlic, onion, and bell pepper until tender.
After this, add the peas, corn, shredded spinach, cabbage, and carrots, and continue to saute for another three to five minutes. Season with 1 tsp crushed red pepper, 1 tsp Italian seasoning, 1/2 tsp ground turmeric, 1 tsp black pepper, 2 tbsp chopped cilantro, and the ground chickpeas. Mix everything together until combined. Once done, remove from heat and allow to cool completely.
Now, make golf-sized balls and place them in a parchment paper-lined baking dish. Place them in the preheated 350 degrees F oven and bake them for 45 to 50 minutes.
