There is a whole world of bite-sized party food I was completely unaware of until I found this delicious recipe on Youtube. There are tons of recipes to make all kinds of interesting things in ice trays over there, but the most outstanding recipe I found was for Ice Cube Tray Pizza Party Bites. I had to attend a potluck at my office and I usually make a crockpot dish for these types of events, but someone else was already making a crockpot entree, so these Ice Cube Tray Pizza Bites were going to be perfect for the occasion. I started by rolling out some pizza dough on my cutting board, I used pop biscuit pizza dough because it is so super easy, you just pop it out of the can then roll it out, so simple! Then I laid the dough over the ice tray and arranged my fillings in small bowls on the counter so I could easily fill them up. In the bowls, I put my wet ingredients, pesto, tomato sauce, cheddar cheese, and mozzarella cheese. Then I chopped and laid out my other pizza ingredients, red bell pepper, ham, pineapple, mushrooms, green bell pepper, and pepperoni.
Then I filled each little container in my ice cube tray with a different mixture of delicious ingredients, it’s really hard not to show favoritism at this stage, but nit everyone likes ham and pineapple, lol 😉
Then you just place another layer of dough over the top of your ice tray and freeze for one hour, then you turn the ice tray upside down on your parchment-lined baking sheet and bake for 20 to 30 minutes on 375 degrees.
These were so simple and so gorgeous, everyone at the office potluck loved them!
