If you love Mexican food, you better try this huevos rancheros recipe by Cooking Con Claudia. A fried tortilla filled with mashed beans, egg, and salsa, then sprinkled with grated cheese on top – perfect for breakfast. Serve it with sliced avocados on the side for a complete meal.

Ingredients

  • 3 cups of beans
  • eggs
  • corn tortillas
  • oil
  • 4 oz tomato sauce
  • 1 jalapeno or serrano pepper (sliced into strips)
  • 4 roma tomatoes (cut into half, then cut into quarters)
  • 1/2 white onion (sliced into strips, then sliced into half)
  • 1 handful cilantro
  • 2 bay leaves
  • 1 teaspoon of garlic salt
  • 1/4 teaspoon of cumin
  • 1/4 teaspoon of oregano

Instructions

Step 1:

Place a pan over medium-high heat and add 5 tablespoons of oil. Once hot, add the onions and jalapeno. Fry for 3 minutes or until translucent. Next, add the tomatoes, garlic salt, cumin, and oregano. Cook for 2 minutes.

Step 2:

Add the tomato sauce and mix everything. Next, add the cilantro and 2 bay leaves. Reduce the heat to the lowest setting, cover it, and let it simmer for 5 minutes. Make a taste test and adjust seasonings if needed. Once it’s perfectly seasoned, remove the bay leaves and transfer to a bowl.

Step 3:

In the same pan over heat, add 1 tablespoon of oil. Once hot, add three cups of beans and smash them while they cook. Once done, turn off the heat.

Step 4:

Place a medium frying pan over medium-high heat and add 1/3 cup of oil. Once hot, add the tortilla and fry it until golden brown on both sides. Make sure to press it down while it cooks. Repeat with other tortillas, then turn off the heat.

Step 5:

Make the tostadas. Spread the beans into the fried tortillas.

Step 6:

In the same pan, cook the egg in the lowest setting.

Step 7:

Place the egg on top of the tostada, then add the salsa on top. Sprinkle cheese on top and serve. Enjoy!
