The Right Way to Measure Ingredients
Flour
Get a dry ingredient measuring cup and a spoon. Spoon your flour into the measuring cup then level it off with the dull side of a knife. Never shove the measuring cup into the flour as it compacts the flour and you’ll get too much flour.
White sugar
You can dip the measuring cup right into the sugar because it is already compacted. Just level the top.
Brown sugar
Dunk your measuring cup to your brown sugar and compact it with your hand. It should keep its form when you invert it.
Baking powder or spices
Dunk your measuring spoon into the baking powder or spices container and level it off.
Liquid
Pour the liquid into a liquid measuring cup and get down to the level of the liquid. You want to see the line right at the mark.
Sticky ingredients – honey, molasses, or corn syrup
Lightly spray your measuring cup with a nonstick cooking spray. Pour the sticky ingredient and get down to the level of your measuring cup. The oil makes pouring it easier.
Mayo, peanut buttery, sour cream
Scoop it with a spoon into the measuring cup, then scrap the top with a butter knife.
How to weigh ingredients
Place a bowl right on top of your digital kitchen scale, then press zero that way you know you won’t be measuring the bowl.
