Scones are one of my favorite breakfast pastries to eat with a cup of coffee. Strawberries are in season for the summer and The Domestic Geek comes up with amazing seasonal recipes. I love watching her on YouTube because she has some of the best quality food tutorials. Plus, she gives detailed instructions throughout her videos and alternative tips. In this recipe, she shows us how easy it is to make strawberry scones. The best part of this recipe is you can change out the strawberry to something else. Once the base is down, there are endless toppings such as cranberries, blueberries, or nuts.

Ingredients:

Strawberry Scones:

  • 2 3/4 cups all-purpose flour
  • 1/3 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup cold butter, cut into 1/2″ cubes
  • 1 cup diced strawberries
  • 1/2 cup half and half cream
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp milk

Vanilla Glaze:

  • 1 cup icing sugar
  • 2 tbsp half and half cream
  • 1/2 tsp vanilla extract

Directions:

First, mix the wet ingredients. Then, in a large bowl, whisk together the flour, sugar, baking powder, and salt. Add the chilled butter and mix it into the flour mixture with your hands until it resembles coarse crumbs. Once the dough is finished, form it into a disc and cut into 6 slices.

Next, transfer the slices to a parchment-lined baking sheet. Using a pastry brush, brush the top of each scone with milk. Freeze the scones for 20-30 minutes and then bake.

Overall, I love using fresh fruits and things that are in season. Since it’s summer, there are many recipes I need to try by The Domestic Geek. Strawberry scones sound perfect and subtly sweet. My mom used to bring them home all the time from a lady she used to work with. This recipe is added to my must bake list.
