Wait! Stop already, you had me at “No-Bake”! Wow, are these easy and delicious! I love cookies in the oven, don’t get me wrong, but I find baking in the oven can get my house a little hot. So when I saw this recipe on Youtube I really wanted to make them right away and the ingredients were super basic and most I already had in the cupboard.
- 1 1/3 cups granulated sugar
- 1/2 cup milk
- 1/2 cup unsalted butter
- 1/4 cup unsweetened cocoa powder
- 1/2 cup chocolate chips
- 3/4 cup peanut butter
- 1 tbsp vanilla extract
- 2 1/2 cups quick-cooking oats
Add the quick oats, chocolate chips, and peanut butter into a medium bowl and set aside.
Place the butter, cocoa powder, sugar, and milk in a medium pot on medium high heat. Stir together while cooking until the mixture reaches a boil. Allow to boil for EXACTLY 60 seconds and remove from heat and pour into the dry mixture.
Stir until fully incorporated then use a small ice cream scoop or tablespoon to drop heaps of the mixture onto parchment paper, then allow to cool for 20 to 30 minutes. Enjoy immediately and store into an airtight container.
After I made this No-Bake Chocolate Peanut Butter Cookies I was in complete shock at how easy they were! Literally two steps dry ingredients and wet ingredients and you are done! did I mention how delicious they were? Oh my, they are so tasty and healthy, I cannot recommend this recipe enough, my kids love them and also love to join in making them.
