In a large mixing bowl, combine the cream cheese and ¾ cup of powdered sugar, then beat together until smooth using an electric hand mixer. Add in the lemon juice and lemon zest, then beat them again until incorporated, set the cream cheese aside. Get a separate mixing bowl, then beat the heavy cream with a whip attachment until soft peaks. Add in the remaining powdered sugar and vanilla extract, then beat until stiff peaks. Add the whipped cream into the cream cheese mixture, then fold it in until well combined.

In a 9×13 inch baking dish, cover the bottom with a single layer of graham crackers. Spread half of the filling mixture evenly, followed by another layer of graham crackers, then spread the remaining filling, and top it with 1 more layer of graham crackers. For the topping, whip the heavy cream until soft peaks form, add powdered sugar and vanilla extract, then whip until stiff peaks (do not overmix). Spread this on top of the final layer of crackers, then cover and refrigerate for about 4 hours, garnish with lemon slices, cut then serve.
