Ingredients:

  • 2 cups or 500ml of turkey stock, you can use other stock that you want
  • 3 tbsp or 25g of butter
  • 3 tbsp or 25g of flour
  • Salt, to taste
  • Pepper, to taste

Directions:

Step 1

Place your roasting tray on top of a stove or burner, then turn the heat to low or medium, and pour the turkey stock or any stock you want. Grab a spatula, then start scraping the tray, and remove the brown bits at the bottom. Continue stirring until incorporated, then pour it over a strainer or fine sieve on top of a bowl or fat separator, and set it aside. Place a saucepan or deep pan on a stove over medium heat, then add the butter, and let it melt before adding the flour.

Step 2

Whisk them together and keep stirring for about 10 to 15 minutes or until it turns a light brown color, then pour the turkey dripping stock on the pan making sure not to include the fat, and continue whisking them together to combine. Let it simmer for a few minutes until it reaches the desired thickness or consistency, then add the salt and pepper, and give them a good stir. Taste and adjust the flavor if needed, then transfer to a serving bowl or cup, serve, and enjoy!
