Ingredients:

  • 8 garlic heads
  • Olive oil
  • Salt, to taste
  • Red chili flakes, to taste
  • Thyme, to taste
  • Other spices of your choice: red pepper flakes/oregano/rosemary/sage/coriander seeds

Directions:

Stovetop garlic confit

Place the garlic cloves in a large bowl or container and shake vigorously for about 1 to 2 minutes then those that weren’t peeled, just peel with your hands. Place the peeled garlic cloves in a small to medium-sized saucepan, then cover it with olive oil, and place it on a stove. Let it simmer over the lowest heat setting possible for about 30 to 45 minutes or until tender and the color turns to a light golden brown. In the last 5 minutes of simmering, add the red chili flakes, salt, and thyme to taste or any of your favorite spices, then let it cool completely, transfer to a jar, and keep it in the fridge.

Oven-roasted garlic confit

Place the peeled garlic cloves in an oven-safe dish, then cover the garlic cloves with olive oil, and add your favorite spices. Place it in the oven, then let it bake at 110°C or 230°F for about 1½ hours or until tender and the color turns to a light golden brown. Let it cool completely, transfer to a jar, and keep it in the fridge. You can serve this by adding them on top of cream cheese spread toasted bread, and sprinkled with spices.
