French toast roll-ups are fun to make with your kids or for yourself at home. This unique way to make french toast by Simply Mama Cooks on YouTube reminds me of taquitos. They look small and stuffed tortillas. For breakfast, I usually like pancakes or waffles. This recipe stood out to me before it wasn’t the traditional flat out french bread. She makes french toast roll-ups stuffed with strawberries and a cinnamon cream cheese filling. The french toast roll-ups can be stuffed with other things if you want to go salty or savory. For example, you can add eggs inside or choice of meat with cheese. I prefer sweets and fresh fruits with my french toast.

Ingredients:

  • 12 to 15 slices of bread (crust removed and save for the French toast fries)
  • 4 oz softened cream cheese
  • 1 Tbsp sugar
  • 1/8 tsp ground cinnamon
  • 2 large eggs
  • 1/2 cup whole milk
  • 1 tsp vanilla extract
  • pinch of nutmeg (grated or ground)
  • pinch of ground cinnamon
  • 8 oz pint of fresh strawberries
  • 1/2 tsp sugar (for strawberries)
  • 2 Tbsp butter (for griddle)
  • 3 Tbsp cooking oil (for griddle)

Directions:

First, wash the strawberries and slice them into small manageable pieces. Then, get the cinnamon cream cheese filling ready. Cut off the crust on each slice of bread and get a rolling pin to flatten out the bread.

Next, once the pieces of bread are smashed and roll-out, start assembling. Take the cream cheese filling and spread it all over the bread. Lastly, add the strawberries then roll it up.

Overall, these french toast roll-ups are different than traditional french toast. They look more appetizing and reminds me of a crepe too. I would love to try to make this because I get a new twist of french toast. Also, I love how Simply Mama Cooks included a way to utilize the extra leftover bread crust for baked French toast fries.
