Ingredients:

For Nacho Chips

  • 1 & 1/4 cup maize flour
  • 1/4 cup all-purpose flour
  • 1 cup of water
  • 1/2 tsp salt
  • 1 tsp oregano
  • a pinch of turmeric powder

For Cheese Powder

  • 3 cubes of processed cheese/cheddar cheese
  • 1 tbsp bread crumbs
  • 1/4 tsp turmeric powder
  • 1 tsp red chili powder
  • 1/2 tsp salt

For Salsa Dip

  • 2 green chili
  • 1  whole capsicum or bell pepper
  • 4 tomatoes
  • 1/2 tsp salt
  • 1 onion
  • 2 cloves of garlic
  • 1/2 tsp pizza seasoning
  • a handful of coriander leaves

Directions:

Step 1

Making the nacho chips. In a pan, add 1 cup of water, 1/2 tsp salt, and a pinch of turmeric powder (optional). Let it boil. Turn off the heat when the water started boiling. Next, add in the 1 & 1/4 cup of maize flour, and mix it well. Cover it and leave for 2-3 minutes. After this, transfer it to a mixing bowl. Add 1/4 cup of all-purpose flour, and 1 tsp dried oregano (optional). Knead to smooth out the dough. Pinch a ball-sized dough and roll it to your hands. Place it on a surface and sprinkle some flour. Roll it thinly. Next, trim out the sides and make a thin sheet. Cut it into triangle pieces. Prick each triangle lightly using a fork. Drop the nacho chips into a pan with medium hot oil. Fry them in low to medium heat, stirring the nacho chips in between. Wait for them to turn crisp and golden then transfer into a strainer.

Step 2

Making the cheese powder. In a baking tray, add a thin layer of bread crumbs. Next, add the grated cheese, spreading it evenly. Place the baking tray in a preheated oven at 338 degrees F for 6 – 8 minutes. After 8 minutes, pull it out of the oven and allow it to cool down completely. After this, break the cheese into small pieces and transfer it into a grinder jar. Add 1 tbsp of bread crumbs, 1/4 tsp turmeric powder, 1 tsp red chili powder, and 1/2 tsp salt. Grind them to make a fine powder. Store in an airtight container and place it in the refrigerator. It will stay good for a couple of weeks.

Step 3

Making the salsa. Roughly cut 2 green chilis and a handful of fresh coriander leaves. Next, grab the 4 tomatoes and make a cross cut to their bottom. Place the tomatoes in a wire mesh on top of the stove and roast them on medium heat. Cook until the skin of the tomatoes charred up. After this, place 1 whole capsicum into the wire mesh and roast it until the skin is burnt. Remove the burnt skin of the tomatoes, then chopped them roughly including the capsicum. Place them into a blending jar. You can also add onion and garlic if you like. Add 1/2 tsp salt and 1/2 tsp pizza seasoning. Blend it. After blending, transfer in a container and squeeze half a lemon and mix well.
