Place a large Dutch oven or pot over medium heat. Put the bacon pieces and cook until they are crisp or browned. Once done cooking, remove the bacon pieces and leave the fat. Set aside.
Add the butter and chopped onions to the same pot. Cook them over medium heat until onions are tender for about 3 to 5 minutes. Next, add the garlic and cook until fragrant for about 30 seconds.
Sprinkle the flour over the ingredients in the pot and stir until it becomes smooth.
Add the diced potatoes, followed by chicken broth, milk, heavy cream, salt, pepper, and ancho chili powder into the pot. Stir well until well combined.
Bring the soup to a boil and cook for about 10 minutes until the potatoes are tender when pierced with a fork.
Reduce the heat to simmer and remove approximately half of the soup from the pot and transfer to a blender. Be careful when transferring as it will be hot. Blend until smooth. You can also use an immersion blender to smoothen the soup.
Pour back the pureed soup into the pot, sour cream, and reserved bacon pieces. Stir well until well combined. Let the soup simmer for about 15 minutes before serving.
Turn off the heat and scoop some into a bowl. Top with sour cream, bacon, and cheddar cheese. Serve and enjoy!
