Cilantro lime chicken and all of the seasonings in this recipe sound so flavorful and bold. I love how it replicates a lot of Mexican seasonings such as cilantro, lime, and cumin. This cilantro lime chicken recipe by Downshiftology on YouTube uses many of the same flavors and I love Mexican food because it includes a lot of fresh ingredients. The chicken thighs are perfect to make for this recipe because it will keep all of the flavors packed in the meat. Chicken thighs are easier to keep moist and tender unlike chicken breast, however, you can substitute if you prefer white meat. I love chicken breast, but I think chicken thighs work best for this specific cilantro lime recipe.
First, prep all of your fresh ingredients. Then, in a mixing bowl, whisk together olive oil, lime juice and zest, cumin, chili powder, minced garlic, honey, salt, pepper, and chopped cilantro.
Next, combine the cilantro lime marinade over the chicken thighs. Let that marinate in the chicken for about 30 minutes to an hour in the fridge. Continue to watch Downshiftology’s YouTube tutorial on how to cook the chicken.
This is a great main course dish to serve with a side of jasmine rice, Mexican rice, steamed vegetables, and more. This is an absolute must recipe that is added to list and I have pinned on Pinterest. The chicken looks so juicy, and this can be keto-friendly if you choose to eat this without any carbs. I love how there are many ways to serve this dish too.
