This cilantro lime chicken recipe by Downshiftology on YouTube uses many of the same flavors and I love Mexican food because it includes a lot of fresh ingredients. The chicken thighs are perfect to make for this recipe because it will keep all of the flavors packed in the meat. Chicken thighs are easier to keep moist and tender unlike chicken breast, however, you can substitute if you prefer white meat. I love chicken breast, but I think chicken thighs work best for this specific cilantro lime recipe.

Ingredients:

  • 6 chicken thighsbone-in, and skin-on
  • 3 tablespoons olive oildivided
  • 2 limeszested and juiced
  • 3 cloves garlicminced
  • 1 tablespoon honey
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup cilantro leaveschopped

Directions:

First, prep all of your fresh ingredients. Then, in a mixing bowl, whisk together olive oil, lime juice and zest, cumin, chili powder, minced garlic, honey, salt, pepper, and chopped cilantro.
