Step 1
In a large mixing bowl, sift the all-purpose flour and baking powder, then mix them together until well-combined. In your stand mixer, add in your butter and sugar, then mix them together for about 7 minutes. Incorporate the eggs one at a time while mixing until well combined, then add in the lemon zest and extract, squeeze half of a lemon as well. Continue mixing until well combined. Add in the flour mixture and 7UP into 3 separate intervals, then mix until well combined. Grease your pan with a non-stick baking spray, then transfer the batter onto it, smoothen the batter around evenly, and shake the pan slightly. Bake it in a preheated oven at 325° for about 1 hour and 15 minutes.

Once it’s done baking, take it out of the oven and check if it’s cooked through by inserting a toothpick. If the toothpick doesn’t come out clean, then put it back in the oven for additional 10 minutes. Let the cake cool completely, then flip it over to a serving dish. For the glaze, simply grab a large measuring cup, and combine the confectioner’s sugar, unsalted butter, hot milk, and lemon extract, mix them all together until uniform. The consistency should be slightly runny and creamy with no visible lumps. Pour the icing over the cake, then serve and enjoy!
