Instructions

Step 1:

Remove steaks from the refrigerator and take off any packaging. Let it sit in a room temperature for at least 30 minutes.

Step 2:

Drizzle olive oil on both sides and rub it to coat. In a small bowl, combine salt, pepper, and onion powder. Sprinkle the rub mixture and rub on both sides.

Step 3:

Preheat your oven to 375F and preheat an oven-safe skillet over high heat until it is smoking hot. Add the steaks to the hot pan and sear for 2 to 3 minutes on each side. If it has a side fat, turn the steak onto its side and render the fat by searing for 2 to 3 minutes.

Step 4:

Once done searing, slide the skillet with the seared steaks into the preheated oven to finish cooking. Remove the steaks from the oven 5 degrees before your desired doneness is achieved. For medium rare, it will be 130 degrees F.

Step 5:

While it’s in the oven, combine butter with garlic in a small bowl using a fork.

Step 6:

Once the steak is done, immediately top it with 1 tablespoon of the butter mixture and let it rest for 10 minutes before cutting. The temperature will continue to rise as it rests by about 5 degrees. Serve and enjoy while warm.
