To make hot water cornbread, you only need 5 simple ingredients–yellow cornmeal, flour, salt, and water for the mixture and vegetable oil for cooking. If you want your cornbread to be sweet, add a little bit of sugar.
It’s incredibly simple to prepare. Mix all the dry ingredients, then pour the boiling water while continuously stirring. Scoop the mixture and fry in hot oil until crispy and golden brown. You can serve these cakes with butter, jam, maple syrup, or honey or as a side dish to beans, soups, sauteed greens, or chilis.
Note: if you want it to be sweet, you can add sugar
In a large bowl, add 1 cup of yellow cornmeal, 1/4 cup of flour, and 1 teaspoon of salt. Mix until well combined. If you want it to be sweet, add a little bit of sugar.
Slowly pour the boiling water while mixing. It should have a very thick consistency. Let it cool for a minute.
Pour a generous amount of oil into a pan and let it heat. Once hot enough, get a spoonful of the mixture and slowly drop into the hot oil. Flatten each one a little bit. Cook until browned, then flip. Smash each one and cook until browned. Remove from the pan and transfer to a plate lined with paper towel. Continue cooking the remaining batter.
Serve and enjoy!
