I had some leftover long-grain rice last weekend and was looking for recipes I could make with it. Timely, RecipeTin Eats shared this hot buttered corn rice recipe on YouTube. It’s surprisingly delicious! It was packed with flavors and the rice was perfectly cooked.

It turned out so good, but I can’t wait to try it with savory dishes. I am thinking of serving it with Beef and Broccoli Stir Fry next time. I bet it will taste amazing. This recipe will definitely go to our weekly meal rotation.

Note:
Place a saucepan over high heat and melt half the butter. Add the minced garlic and saute for 15 seconds. Next, add the corn and cook for 2 minutes.
Stir in rice and cook for 1 minute. Next, add chicken stock, ground black pepper, and salt. Stir everything to combine. Let it come to a proper simmer (the whole surface rippling or bubbling).
Once simmering, place the lid and lower the heat to medium-low or low. Cook for 12 minutes or until all liquid is absorbed. Tilt the pot to check; do not peek or stir.
After 12 minutes, remove it from the stove with the lid still on. Let it rest for about 10 minutes. Do not skip this step.
Add the remaining butter and fluff it through until melted. Stir in the sliced green onion. Serve hot and enjoy!
