It turned out so good, but I can’t wait to try it with savory dishes. I am thinking of serving it with Beef and Broccoli Stir Fry next time. I bet it will taste amazing. This recipe will definitely go to our weekly meal rotation.

If you are tired of eating plain white rice, this hot buttered corn rice is the way to go!

Easy Hot Buttered Corn Rice Ingredients

  • 4 tablespoons of unsalted butter (divided)
  • 3 big garlic cloves (finely minced)
  • 2 cups of frozen corn or fresh corn kernels
  • 1/4 teaspoon of cooking salt or kosher salt
  • pinch of ground black pepper
  • 1 cup of long-grain rice (uncooked, not rinsed)
  • 1 1/2 cups of low-sodium chicken stock or broth (plus 2 tablespoons if using fresh corn)
  • 2 green onion stems (finely sliced)

Note:

  • You can also use basmati, medium grain, or sushi rice for this recipe
  • No need to thaw frozen corn

How to Make Hot Buttered Corn Rice

Step 1:

Place a saucepan over high heat and melt half the butter. Add the minced garlic and saute for 15 seconds. Next, add the corn and cook for 2 minutes.

Step 2:

Stir in rice and cook for 1 minute. Next, add chicken stock, ground black pepper, and salt. Stir everything to combine. Let it come to a proper simmer (the whole surface rippling or bubbling).

Step 3:

Once simmering, place the lid and lower the heat to medium-low or low. Cook for 12 minutes or until all liquid is absorbed. Tilt the pot to check; do not peek or stir.

Step 4:

After 12 minutes, remove it from the stove with the lid still on. Let it rest for about 10 minutes. Do not skip this step.

Step 5:

Add the remaining butter and fluff it through until melted. Stir in the sliced green onion. Serve hot and enjoy!
