Preheat your oven to 425 degrees F. Next, wash your potatoes thoroughly and pat them dry. Cut them into evenly-sized wedges, then transfer them to a large bowl. After this, break one head of garlic into individual pieces, then cut a slit into each clove, and add them to the potatoes. Add in 2 tbsp extra-virgin olive oil, 2 tbsp honey, 1 tsp sweet smoked Spanish paprika, 1 tsp dried rosemary, a pinch of salt, and a dash of ground black pepper. Toss together gently, making sure each piece of potato is coated well.

Once done, transfer the potatoes to a parchment paper-lined baking tray, spreading them evenly, skin side down. Place them in the preheated 425 degrees F oven and bake them for 30 minutes.
