This homemade caramel candy by Sugar Spun Run is chewy, soft, and one of the best treats for Fall and upcoming Holidays. It’s buttery, sweet, and rich. The texture and taste are absolutely perfect. Some caramels can be hard to chew and too sweet for my liking, but not this one. They don’t get stuck in my teeth, which I love the most.

These candies are way too good to resist. You can coat them in melted chocolate or top with sea salt. With the sea salt, they become salted caramel candies. Wrap them in individual wrappers so they will last longer. They are perfect for gatherings or parties.

Start by lining an 8″ square pan with parchment paper and set it aside for later.
Take a heavy-bottomed saucepan and add sugars, evaporated milk, heavy cream, corn syrup, butter, and salt. Mix to combine.
Place the saucepan over medium heat and cook until smooth and the butter is melted while striking frequently using a wooden spoon or rubber spatula. Attach a candy thermometer to the side. Be sure it doesn’t touch the bottom of the pot and is suspended halfway in the caramel. Stir the mixture constantly until it reaches 240 to 243F. It will take about an hour of stirring but it will be worth it.
Once it reaches the right temperature, remove it from heat and add the vanilla extract. Mix until well incorporated.
Immediately pour the caramel into the prepared pan, then allow it to cool completely. It will take hours or overnight. Once set, cut it into small pieces. You can wrap them in strips of wax or cellophane wrappers.
