Ingredients:

  • 2 1/2 cups of pure cream (40% fat)

Directions:

Step 1

Add 2 1/2 cups of pure cream (40% fat) to a stand mixer. Set it on low and start beating just until it thickens (about 20 seconds). Then, turn the mixer to a high setting and beat for three minutes.

Step 2

Once three minutes are up, you’ll see that the butter separates from the milk. Take the butter to a plate, and squash it together with clean hands. Give it a little squeeze just to get the rest of the buttermilk out. Once done, transfer the butter to a mold (a loaf pan will do) and squash it in. Cover and pop it in the fridge. You can consume it within two weeks.
