To make pancake muffins, you will need oat flour or ground oats, whole wheat flour, baking powder, baking soda, salt, eggs, buttermilk, applesauce, maple syrup, and vanilla extract. Most are basic pantry staples, so you only need to shop for a few ingredients. For the toppings, you can choose from, chocolate, fruits, nuts, peanut butter, or anything you prefer.

In a large mixing bowl, sift oat flour and whole wheat flour, then add baking powder, baking soda, and salt. Whisk to combine.
Get a separate bowl, then add the eggs, buttermilk, applesauce, maple syrup, and vanilla extract. Whisk to combine.
Pour the wet mixture into the dry mixture. Gently stir until just combined. A few lumps are fine, they will make the muffins fluffier. Make sure not to overmix it. Set aside for 5 minutes. While waiting, grease a muffin tin or line with muffin liners.
Fill each muffin cup about 3/4 full with batter, then sprinkle 1 tablespoon of your favorite toppings on top, pressing them down lightly.
Place inside a 375F oven and bake for 20 to 25 minutes, or until a toothpick comes out clean when inserted into the center. Once done baking, transfer the muffins to a wire rack and let them cool for a couple of minutes. Serve warm with a glass of milk or yogurt. Enjoy!
