Easy Greek Salad Ingredients

For the salad:

  • 2 hearts of romaine lettuce (chopped)
  • 1 bell pepper (chopped)
  • 1/4 cup of red onion (thinly sliced)
  • 1 cup of cherry tomatoes (sliced in half)
  • 1 cup of cucumber (chopped)
  • 1 cup of garbanzo beans (chickpeas) – drained and rinsed
  • 1/2 cup of kalamata olives (sliced in half)
  • 1/2 cup of feta cheese (crumbled)

For the Greek salad dressing:

  • 1 clove of garlic (crushed)
  • 1 teaspoon of dried oregano
  • 1/4 cup of lemon juice
  • 1/4 cup of red wine vinegar
  • 1/3 cup of extra virgin olive oil
  • 1/2 teaspoon of Dijon mustard
  • 1/4 teaspoon of sea salt
  • 1/4 teaspoon of black pepper

 

How to Make Greek Salad

Step 1:

In a large bowl, add the chopped romaine lettuce, then layer the veggies, chickpeas, sliced kalamata olives, and feta cheese on top.

Step 2:

In a small jar, add crushed garlic, 1 teaspoon of dried oregano, 1/4 cup of lemon juice, and 1/4 cup of red wine vinegar. Whisk until well combined. Next, slowly whisk in extra virgin olive oil, then season with 1/4 teaspoon of salt and 1/4 teaspoon of black pepper.

Step 3:
