This healthy chicken rice soup by Ashley . The Recipe Rebel on YouTube is an easy one-pot soup recipe. It’s a hearty and healthy soup that’s perfect for cold or rainy days. It’s loaded with vegetables, lean chicken, and rice. This soup can also be made in the slow cooker. It’s a quick 30-minute recipe on the stovetop. It’s a basic soup recipe that can be easily stored in the fridge as leftovers. Soups are my favorite dishes to have for a cozy night because it’s healthy and filling. I love having for seconds or having a big bowl of soup on the couch too.

Ingredients:

  • 1 tablespoon oil
  • 1 onion minced
  • 3 large carrots peeled and diced
  • 1 rib celery diced
  • 1 teaspoon minced garlic
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried thyme
  • 5 cups low sodium chicken broth
  • 2 chicken breasts raw
  • 1 cup long-grain brown rice rinsed
  • 1 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup evaporated milk
