I don’t know about you, but I was blown away by these healthy breakfast egg muffins. This recipe by TheSeriousfitness is one of the best snacks you can eat in the morning. It’s fully loaded with vegetables that are nutritious and good for your health. You can also make these ahead and grab one whenever you’re hungry. Preheat the oven to 350F.
Get a non-stick 12-slot muffin pan and grease it with cooking spray. Set it aside.
Place a large skillet over medium heat. Add 1 tablespoon of olive oil, 1/2 cup of red pepper, 1/2 cup of green pepper, 1/2 cup of yellow pepper, and 1/2 cup of onion.
Saute the vegetables for about 5 to 7 minutes. Next, add 1 cup of baby spinach, 1/2 cup of mushrooms, and 1/2 cup of chopped broccoli. Cook for an additional 2 minutes.
Season the vegetables with salt and black pepper, then mix well. Once done, remove from heat.
Grease the muffin tray so it will be easier to remove each piece. Put 1 heaping tablespoon of the vegetable mixture in each slot.
Crack 7 eggs in a bowl and whisk together. Pour the beaten egg into the slots of the prepared muffin pan. Make sure not to fill it until the edges.
Place inside the preheated oven and bake for about 15 to 20 minutes, or until the eggs are cooked.
Once the eggs are done, remove them from the oven and tray. Let them cool slightly and serve with hot sauce on top if desired. Enjoy!
