Place the cooked chickpeas in a bowl and mash with a fork or a food processor. Do the same with the potatoes in a different bowl.
Peel and grate the onion, garlic, and ginger.
Add 1 tablespoon of olive oil in a frying pan and add the grated garlic. Saute for a few seconds, then add the ginger and onion. Cook until golden brown.
In a large bowl, combine the mashed potatoes, chickpeas, and fried vegetables. Season with black pepper, salt, cumin, and chopped parsley. Mix until well combined. You can also mix it with your hands.
Scoop a heaping tablespoon of the mixture and shape it into a small patty using your hands. Repeat with the remaining mixture.
Add two tablespoons of olive oil to a frying pan. Once hot, add the chickpea patties and cook for about 2 to 3 minutes on each side or until golden brown.
Make the sauce. Add all ingredients in a bowl and mix until well combined.
Serve with the sauce while warm. Enjoy!
