Ingredients:

  • 1 egg
  • 1 medium russet potato
  • 1 slice of bacon, cooked
  • spray oil, for greasing
  • salt and ground black pepper, to taste

Directions:

To start, grease a standard non-stick muffin tin with some oil spray and set it aside. Next, wash the potato thoroughly and grate it. Once done, divide it on each muffin cup, filling each almost all the way to the top. Now, using your fingers, make a little well at the center and season each with a pinch of salt and ground black pepper. Place them in a preheated 425 degrees F oven and bake for 30 to 40 minutes.

Step 2

Once done baking, remove them from the oven and start assembling the hashbrowns cups. Lay the cooked bacon around the outsides of each cup, then crack one egg on each. Season with some salt and ground black pepper to taste. Place them back in the 425 degrees F oven and bake for a further eight to fifteen minutes, depending on how you like your eggs. After baking, remove from the oven and let them rest for five minutes. Serve and enjoy!
