Omelets are easy and fun to make. Not to mention, they are also delicious and healthy. This recipe from True North Cafe on Youtube adds another breakfast staple; the classic hash brown, which made this omelet recipe special and one of a kind. I used to eat my omelet with hash browns on the side but now, I can eat them together! Learn how to make this hearty omelet for breakfast, lunch, or even a light dinner idea.

On the griddle, melt up some butter then stir in the hash browns. Mix up the hash browns nicely. Layer the hash browns thinly and shape them nice and square to make them more manageable. Let it sit to allow the hash brown to cook. Next, while waiting for the hash brown to be cooked, on the other side of the griddle, put some butter again and saute the veggies. Add a pinch of salt to taste; mix it up. At this point, season the hash brown using MAD seasoning (optional). Lastly, cook the ham on a vacant part of the griddle; make it a little brown for the extra flavor.
When the edges of the hash browns start to get brown, get ready to add the beaten eggs. Cover the top of the hash browns with eggs and spread them nicely and evenly. Next, add the cheese to the layer. It’s up to you how many slices of cheese to add. After this, sprinkle the ham all the way across the omelet followed by the sauteed veggies. Sliced them into 3 cuts then fold each piece. Serve while it’s hot.
