Ingredients:

  • 4 blueberries
  • 3 envelopes of plain gelatin
  • 1/4 cup cherry juice
  • 1/2 cup coconut milk
  • 1-2 tbsp sugar
  • boiling water

Directions:

Step 1

Combine the cherry juice and 1 packet of unflavored gelatin. Let it sit for five minutes until the gelatin is kind of absorbed into the juice, then add 1/4 cup of boiling water. Whisk it until it’s smooth and dissolved. Next, into the bottom part of your mold, pick up a little tiny dab of the juice using the vacuum straw method. Then, set one blueberry down into the gelatin at the bottom. Now, put about a teaspoon of gelatin on each bottom mold, just enough to cover the blueberries, then place it in the fridge to let it set.

Step 2

While waiting, time to make the white part of the eyeball. In a mixing jug, combine 1/2 cup of coconut milk and 1-2 tbsp of sugar. Stir to combine. After this, add 2 packets of unflavored gelatin, let it plump up a little bit, then add another 1/2 cup of boiling water and mix it up. After this, pour the coconut milk mixture into the mold, then cover it with its lid. Put it in the fridge for an hour or so until it’s fully set. After it sets, remove the eyeballs from the mold and serve as you like.
