Ingredients:

  • 1/2 cup melted butter
  • 2/3 cup granulated sugar
  • 2 tbsp honey
  • 2 large eggs
  • 1 1/4 cups buttermilk
  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp kosher salt

For Serving:

  • 1/4 cup melted butter
  • 2 tbsp honey

Directions:

Step 1

Preheat your oven to 350 degrees F. Combine 2/3 cup granulated sugar, 2 tbsp honey, and 1/2 cup melted butter in a large mixing bowl. Whisk together, then stir in the cracked eggs one at a time. After this, gradually stir in 1 1/4 cups of buttermilk. Next, add 1/2 tsp baking soda, 1/4 tsp kosher salt, and 1 cup yellow cornmeal. Whisk until fully incorporated, then stir in 1 cup of all-purpose flour. (Don’t overmix the batter.)

Step 2

Generously grease the glass dish with some butter, then add the batter. Spread evenly and nicely, and tap to remove any air bubbles. Place it in the preheated 350 degrees F oven and bake for 45 to 50 minutes. After baking, drizzle the melted butter on top and spread it nicely. Serve with a drizzle of honey. Enjoy!
