One of my all-time favorite foods is usually the old-fashioned ones. There’s just something that makes them so nostalgic and delicious at the same time. Just like this ambrosia salad recipe made by The Stay At Home Chef on YouTube, which is incredibly similar to how my Grandma would usually make it.

Ingredients:

  • 1½ cups of mandarin orange slices, canned or fresh
  • 1½ cups of diced pineapple, canned or fresh
  • 2 medium bananas, sliced
  • 1 pound of strawberries, sliced
  • 1 cup of unsweetened coconut flakes, or shredded coconut
  • ¼ cup of lemon juice
  • 1½ cups of mini marshmallows
  • 1 cup of heavy cream
  • 1 teaspoon of vanilla extract
  • 2 tablespoons of powdered sugar
  • 2 teaspoons of cornstarch
  • ½ cup of plain or vanilla yogurt

Directions:

Step 1

Peel and chop the pineapple into small bite-sized pieces, then transfer them to a large mixing bowl together with the oranges, slice the bananas and strawberries, then place them onto the bowl as well. Juice your lemon, then pour it over the fruit to add some flavor and prevent oxidation. Then, add in the coconut flakes, toss them together lightly. Then, add in small colored marshmallows.

Step 2

In a separate large mixing bowl, use a hand mixer or a stand mixer to whip the heavy cream until soft peaks form, then add in the vanilla extract along the way. Keep on whipping while slowly adding in the powdered sugar and cornstarch. Continue whipping until stiff peaks form, for about 5 minutes. Then you can add in the vanilla yogurt, and fold it in with the whipped cream mixture. Add this mixture to the fruit bowl. Then, toss to coat until ingredients are evenly dispersed throughout the salad. Remember to toss and fold gently as to not destroy the bananas. Chill in the fridge for about an hour before serving.
