For the frosting and topping:
Start by preheating your oven to 350F and lining a 9 by 13-inch baking pan with parchment paper with overhang for easy lifting.
In a large bowl, add butter and brown sugar. Beat until well combined. Add eggs, orange zest, and vanilla extract. Beat until smooth.
Slowly beat in the gluten-free flour, ground ginger, baking powder, and salt until just combined. Make sure not to overmix.
Stir in the white chocolate chips and dried cranberries using a spatula.
Transfer to the prepared pan and spread evenly with an offset spatula. Bake for 20 to 22 minutes. Once done baking, allow it to cool completely before frosting.
Make the frosting. In a medium bowl, beat together cream cheese and powdered sugar. Save one tablespoon of melted white chocolate for later, then add the remaining to the cream cheese mixture. Next, add the orange zest and vanilla extract.
Spread frosting onto the cooled bars and top it with chopped dried cranberries. Drizzle the reserved white chocolate. Refrigerate for at least an hour before serving.
